Making Kimchi Jjigae

Ingredients:

  • 2 cups of well-fermented kimchi, chopped
  • 200g of pork (or substitute with your choice of protein)
  • 1 small onion, sliced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, minced
  • 2 tablespoons of red pepper flakes
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1 package of tofu, cut into bite-sized pieces
  • 2 cups of water
  • Salt and pepper to taste


Instructions:

  1. In a large pot, sauté the pork until it begins to brown.
  2. Add the onion, garlic, and ginger, and continue to cook until the onion becomes translucent.
  3. Add the chopped kimchi and red pepper flakes. Sauté for a few minutes to meld the flavors.
  4. Pour in the water, soy sauce, and sesame oil. Let it come to a gentle boil.
  5. Gently add the tofu to the pot and let it simmer until everything is heated through.
  6. Season with salt and pepper to taste.
